Baked Mashed Sweet Potatoes

 

Mom surprised me with an amazing side dish on this one. It is so easy and is going to be finding it’s way to may table quite a lot in the near future. Let me know what you think about this version and y’all enjoy.


Ingredients:

4 medium sweet potatoes, cut into 1/2 inch rounds
2 tablespoons oil
1/2 teaspoon salt
2 tablespoons pure maple syrup
1/2 teaspoon cinnamon
1/2-1 teaspoon cayenne pepper
4 tablespoon’s salted butter/room temperature
2 tablespoons toasted sesame seeds
Sea Salt

  1. Preheat oven to 425°F
  2. On a large sheet pan, toss the sweet potatoes, oil and salt. Arrange in even layer and bake for 20 minutes.
  3. Meanwhile in a small bowl stir together the syrup, cinnamon, cayenne pepper. Remove potatoes from oven and drizzle the mixture over the potatoes.
  4. Return to oven and bake an additional 15 minutes or until tender.
  5. Remove from oven and with a fork flip them over and press down slightly on them to smash, keeping the rounds intact. Set oven to broil and return potatoes to oven until lightly charred…watch them carefully so they don’t burn. (5-10 minutes)
  6. Transfer to serving dish and smear butter all over the potatoes and sprinkle with sesame seeds / serve.
