So mom shared her Baked Butternut Squash recipe with us. She for some reason she could not stop calling it Eggplant. Oh well, either way, it is delicious and one you all have to give a try. Let me know what you think about this version and y’all enjoy.
2 Butternut Squash – halved
1 teaspoon fennel seed
1 teaspoon paprika
1 teaspoon red pepper flakes
1 teaspoon cumin
1/2 teaspoon cinnamon
1/8 teaspoon ground cloves
2 teaspoons salt
1 large onion
2 lb ground beef
black pepper to taste
3 cloves garlic chopped
2 cups diced tomatoes
1/2 cup nuts of your choice – diced fine
1 cup grated cheddar cheese grated
1 cup grated parmesan cheese
Parsley to garnish
In a small bowl combine the fennel seed, paprika, red pepper flakes, cumin, cinnamon and ground cloves and mix well. Sprinkle evenly over the butternut squash.
Now bake your halved butternut squash for 15-20 minutes in a preheated 425° oven.
While they are baking, brown the onion and ground beef in a large skillet. Add in the salt and pepper, garlic, nuts and tomatoes. Cook for 2-3 minutes after meat is browned.
Remove the butternut squash from the oven and the meat mixture from the stove.
Evenly distribute the meat mixture over the squash.
Sprinkle with the cheeses and put back in oven just long enough to melt the cheese
