This is one of my favorite old time cake recipes that I just added a bit of spirit to. Actually a quarter cup of spirit in the way of Jack Daniels Tennessee Honey®. This is my all time favorite sipping whiskey and I think it adds just the right taste to this cake. The whiskey along with the pecans is a winning recipe in my book. Let me know what y’all think. You of course don’t need to add the whiskey, but as I always say, “Why Wouldn’t You”.
Ingredients
- 1 cup granulated sugar
- 1 cup brown sugar packed
- 4 large eggs
- 1 cup vegetable oil (or 3/4 cup oil & 1/4 cup Whiskey)
- 1-1/2 cups flour
- 2 1/4 teaspoons baking powder
- 1/4 teaspoon salt
- 1 tsp vanilla extract
- 2 cups pecans chopped very fine
- In a large bowl, combine the sugars and egg. Mix well to incorporate.
- Add the oil and vanilla and stir well to combine.
- Add in the flour, baking soda and salt and mix well to make sure all the flour is mixed in.
- Add in the pecans and mix just enough to combine.
- Pour this batter into a prepared 9×13 baking dish.
- Bake in a preheated 350°F oven for 30-35 minutes
- Let cool 3-5 minutes before cutting.
- Enjoy with ice cream and caramel sauce.
