This is one of moms favorite Easter salads. It is made with cranberries, mandarin oranges and crushed pineapple so it really has a refreshing fruit flavor. Y’all are going to love how she tops it of with sugared fruits. Let us know what you think and how you change your jello salads up.
- 1 can crushed pineapple (drained/reserve the juice)
- 1 can mandarin oranges drained
- 1 can cranberry sauce
- 1 small tube Cool Whip® (or whipped cream like mom did)
- 1 package cherry gelatin
- enough water to add to pineapple juice to equal a cup
- Sugared Fruit (see video)
- Put the drained pineapple and mandarin oranges in a large bowl.
- In a small pot add the pineapple juice and enough water to equal one cup fluid.
- Bring to boil and then add gelatin and cook for 3-4 minutes.
- While gelatin is cooking, add the cranberry sauce to the Cool Whip and mix well.
- Add to the pineapple/oranges in the large bowl and mix together.
- Remove gelatin from stove and add 4-5 ice cubes to bring down temperature.
- Add the gelatin mixture to the large bowl and mix well.
- Cover and refrigerate till set.
- You can top with sugared fruit or as mom did, colored coconut and jelly beans.
