This is a quick and easy casserole to throw together for your family when you are short on time and have some leftover pulled pork. Heck you can use chicken or beef in this dish to and it will be just as amazingly delicious. 1 pound pulled pork – COOKED
4 ounces diced green chiles
1 tablespoon Taco Seasoning
15 ounces canned black beans, rinsed and drained
12 ounces frozen corn
3 cups shredded Mexican blend cheese
28 ounce package frozen tater tots
10 ounce can red enchilada sauce
In a large bowl, mix the cooked pulled pork, green chiles, taco seasoning mix, black beans, corn, 2 cups of the cheese and can of enchilada sauce.
Pour mixture into a greased 9 X 13 casserole dish. Arrange the tots on top of the mixture in a single layer.
Bake uncovered for 30-40 minutes or until tater tots are nice and crispy.
Sprinkle the remaining 1 cup of cheese on top and place back in the over for 2-3 minutes or until cheese has melted.
