This is moms quick and easy version of Cream of Broccoli Soup. There is no hassle with this one and it will be ready to eat before you know it. She uses simple ingredients and takes a short cut by steaming her broccoli and celery in a cup water in the microwave to cook it through. Give it a try and let us know what you think of her version. - 2 cups finely chopped broccoli
- 1/2 cup finely chopped celery
- 1 cup water
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 cup finely chopped onion
- 6 tablespoons butter
- 5 tablespoons flour
- 2 ups milk
- 8 ounces Velveeta cheese diced in small pieces
- 1/2 teaspoon chicken base
- 1 tablespoon bacon bits
- Cook broccoli and celery with a cup water to steam in the microwave
- In a large pan, saute the onion in the butter. Blend in the flour and stir well to combine.
- Cook this 2-3 minutes to cook out the flour taste.
- Stir in the cheese, bacon bits and salt and pepper.
- Combine the broccoli/celery to the cheese mixture and bring to a low boil.
- Stir mixture constantly so it does not scorch/burn. Cook 6-8 minutes
- Let cool a few minutes before serving.
