Y’all this is the Cuban Yuca with Mojo that I made in our Cuban Christmas Eve meal with Olga. I put the video below so you can see how we put it together. It’s where we made the Cuban Pork Roast and the Cuban Black Beans.
Yuca is a starchy root that cooks up much like potatoes and can be used in numerous ways like potatoes. This version is with a onion and mojo sauce which gives the yuca an amazing flavor.
- 2 tablespoons olive oil
- 2-3 cups yuca (cassava) sliced in 2-3 inch pieces
- 1/2 sliced white onion
- 1 teaspoon garlic
- sprinkle of Adobo seasoning
- 1/2 – 3/4 cup Mojo
- Pinch of salt
- Juice of half a lemon
- Boil yuca till softened (just like boiling potatoes to mash)
- While yuca is boiling, prepare the mojo sauce
- In small sauce pan add olive oil and heat over medium burner till shimmering
- Add sliced onion and slowly caramelize
- Add garlic once onion is caramelized and cook 1 minute, don’t let garlic burn
- Add Adobe, salt and lemon juice. Stir and cook 1 minute
- Add mojo and reduce heat and simmer 2-3 minutes
- Drain yuca and place on a platter
- Pour mojo sauce over yuca and serve.
