Caesar Chicken Tortellini
This is another of my quick and easy, one pan dinners. Y’all are going to love the creamy tangy sauce that the Caesar dressing brings.

Ingredients:
1 20 ounce bag fresh cheese tortellini thawed but not cooked
cooking oil of choice
1 pound boneless skinless chicken thighs or breasts cut in bite size pieces
1 onion diced
kosher salt, pepper, crushed red pepper flakes
8 ounces fresh, chopped spinach
5 to 6 cloves garlic minced
16 ounces Caesar salad dressing
1/2 cup shredded parmesan cheese
Optional: mozzarella cheese
Cut the chicken in 1 inch cubes.
Put your cooking oil in pan and heat over medium high heat.
Add chicken when it stats to shimmer.
Saute chicken until golden and then add in the diced onion. Cook 1-2 minutes
Once onion is translucent, add in the tortellini and 1/8 cup water, cover and cook 1-3 minutes.
If you are using frozen pasta, cook it first as directed and then add in at this point.
Add the spinach to the pan and a touch more water, cover and cook till spinach is wilted.
Add the red pepper flakes, garlic and Caesar dressing and mix well.
Remove from heat and add the mozzarella cheese, mix to combine.
Let sit for a few minutes if the sauce needs to thicken.
Serve
