We are getting our first tropical storm of the season hitting Florida. Tampa is being pummeled right now by wind and rain, we are under a Tornado warning at the moment. Silly me, last night I did a dry rub on a rack of ribs and put them in the refrigerator to marinate over night. Waking up this morning to this storm I had to decide whether to face the rain and grill, or move the project to the oven. After a lot of people telling me to man up on face book, I decided to go ahead and try for the grill. Fortunately for me, I had them done before the extremely bad weather hit. I ventured out between rain bands to turn and check on them. So I have aptly named these ribs after Tropical Storm Debby.
I love barbequed ribs, but I am not a fan of saucy ones. I prefer mine with a dry rub. So I put together one last night consisting of a few different ingredients that I thought might work out well. It turns out that the rub was perfect and turned out an almost caramelized tasting rib. This is due to the amount of brown sugar I used. I really like this combination. I think y’all will too.
Ingredients:
- 1 1/2 cups brown sugar
- 1 tablespoon paprika
- 1 tablespoon chili powder
- 1 teaspoon cinnamon
- 1 tablespoon onion powder
- 1 tablespoon ground black pepper
- 1 tablespoon garlic powder
- 2 tablespoons salt
- 1 teaspoon ground mustard
- 1 teaspoon ground coriander
- 1 teaspoon ground ginger
- 1 tablespoon ground cumin
2 racks of ribs. ( I cut mine into 2 bone sections)
Combine all ingredients and rub into all the ribs. Place ribs in a zip lock bag or bowl and cover with remaining rub. Shake/mix well and place in refrigerator at least 2 hours. I did mine overnight. You’ll find your ribs have an almost bbq sauce type liquid in bag/bowl in morning. This is from the salt pulling juice out of the ribs and mixing with your rub.

Place ribs in the center of a fully heated grill (turn on only side burners and leave middle ones off. or place on one side of grill and leave other side off.) and cook for about 90min-120-min. You’ll need to check for doneness due to all grills cooking at different temperatures. You can also do these in the oven fully, or start on grill to get a some charring and then finish in oven.

how long would you cook these in the oven, would you cover them with foil and what temp would you bake them at?
