This is my moms Hawaiian inspired Pineapple and Shrimp Rice recipe. The flavors truly compliment each other so well. I think this will be come a family favorite of yours. Give it a try and let us know what you think.
- 2 cups chicken broth
- 1 cup uncooked long grain rice
- 1 garlic clove minced
- 1 medium onion chopped
- 1 green pepper, julienned
- 2 tablespoons vegetable oil
- 2 teaspoons soy sauce
- 1/4 tablespoon ground ginger
- 1 1/2 lbs cooked medium shrimp – peeled
- 1/2 cups cubed fully cooked ham
- 1 can pineapple tidbits – drained
- In a large saucepan bring the broth to a boil. Stir in the rice and reduce heat to a low boil and cover. simmer for 25 minutes or until tender
- In a large skillet sauté the onion and green pepper till tender. Then add garlic and sauté another minute.
- Stir in the soy sauce and ginger, mix to combine.
- Add shrimp, ham and pineapple then stir in the rice. Mix to combine
- Transfer to a greased 2 quart baking dish and bake at 350° F for 15-20 minutes uncovered. or until heated through.
- Stir before serving.
