Y’all this is an amazing way to make potato salad to take to a family get together. It’s just different enough that everyone is going to be asking for the recipe. I guarantee you. So easy to throw the potato’s in the smoker while your doing your other meat. Let me know what you think.
- 8-10 Large potato’s
- 1 cup mayonnaise
- 1/4 cup BBQ Sauce
- 2 tablespoon Spicy Dijon Mustard
- 6 eggs
- 1/2 diced sweet onion
- 1 teaspoon salt (to taste)
- 1/4 cup sweet relish
- 3/4 cup shredded cheddar cheese
- First dice your potato’s into 1 inch cubes.
- Boil on stove till almost fork tender.
- Place in smoker on screen mats (optional, you can do without smoking)
- Smoke for about 1 hour at 225° (I do while I smoke chicken or pork)
- While potato’s smoke, boil your eggs. Once done, peal and dice.
- In large bowl combine the mayo, BBQ sauce and mustard.
- Add potato’s, onion, salt and relish. Toss to combine.
- Add in the cheese and combine.
- Refrigerate for about an hour before serving.
