I have fallen in love with overnight oats. They are so easy to make and you can make a few and keep in fridge for the week. Seeing that I have had to decrease my bad cholesterol and raise my good cholesterol, this is a great recipe to do just that. Plenty of fiber each morning for the bad cholesterol and the chia seeds to increase the good. Did I mention how easy this is to make? Y’all are going to love it. Plus you can change it up to whatever you might like. I have omitted the maple syrup and blueberries and added 1 teaspoon of cocoa powder and 1 packet of artificial sweetener and found it makes a great chocolate oatmeal. Let me know what changes you come up with. I’d love to hear from y’all.
INGREDIENTS
- ½ cup old-fashioned oats (not minute oats)
- ½ cup milk (I’ve been using almond milk)
- ½ teaspoon pure maple syrup (I used sugar free)
- ¼ teaspoon pure vanilla extract
- 1 ½ tablespoons chia seeds
- ½ cup blueberries (fresh or frozen)
DIRECTIONS
- Combine all ingredients in a mason jar. Seal with a lid and shake to mix. I just love mason jars.
- Refrigerate overnight and up to 3-5 days.
