Strawberry’s & Cream Cookies

One of my favorite fruits has to be strawberries.  I grew up during my high school years in Troy, Ohio and always looked forward to the strawberry festival each year.  Then I found myself moved for the second part of my life to Tampa, Florida and can you believe it?  We have a strawberry festival here, over in Plant City each year.  I truly can eat more strawberries than imaginable.

One night last week when I was going through my Great Aunt Bernice’s (Aunt Bee) recipe’s I found a simple cake mix cookie using a chocolate cake and chocolate chips.  So tonight as I was finishing cleaning the kitchen after dinner I heard a yell from the other room for something to snack on.  It never fails.  I truly believe that the sound of the dishwasher starts this house to craving more.  Well I remembered Aunt Bee’s recipe and checked the cabinet to see if I had a cake mix.  Not very often you’ll find one in my kitchen.  As y’all know, I prefer to make my own cakes from scratch.  Nope, none.  Believe it or not, now I wanted to make these cookies too.  I know, it’s after 8pm and my kitchen is clean, but Publix is only 3 blocks away.  Well 10 minutes later and a couple bucks shelled out I had a cake mix. 

I stood there looking at all those cake mixes and then I saw it.  Strawberry.  Yupp!!! Strawberry it’s gonna be.  Well I couldn’t use chocolate chips in these.  Well I could, but I thought white chocolate sounded better.  So born tonight are my Strawberries and Cream Cookies.  Not really my recipe.  Just a bit of a conversion on my wonderful aunt’s.  I think she’d love them.

Ingredients:

  • 1 strawberry cake mix
  • 1/2 cup canola oil
  • 2 eggs
  • 3/4 cup white chocolate chips
  1. Combine eggs and oil in mixer bowl and combine well.
  2. Add cake mix and continue to mix and combine.
  3. Add white chocolate chips
  4. Bake at 350° for 8-10 minutes
