As y’all know, I love, love, love fresh veggies and fruits right from the garden or farmers market. Mom always kept a cucumber onion salad in the refrigerator all summer, utilizing fresh cucumbers and onions to replenish each week. I was craving that flavor, but also have some beautiful tomatoes here that I want to use up. So I decided to make a few additions and make my own little summer salad to go with some steaks I am doing on the grill today.
Y’all, make additions and take out things you don’t like from this recipe. Maybe make it this way first and then “Make It Your Own”. Use what you have fresh and don’t let beautiful veggies/fruits go to waste. I think y’all are going to love these flavors together.
Ingredients
- 4 large fresh tomatoes, diced
- 2 cucumbers, peeled, halved and sliced
- 1 small red onion, chopped
- 1/2 cup mozzarella cheese (diced same size as tomatoes)
- 1 garlic clove, minced
- 4 teaspoons fresh basil (chopped)
- 2teaspoon sugar
- 1/3 cup red wine vinegar
- 1/2 cup olive oil
- 1/2 teaspoon salt (or to taste)
- 1/2 teaspoon fresh ground pepper (or to taste)
Instructions
- In large bowl, mix together tomato, cucumber, mozzarella and onions.
- In a small bowl, whisk together basil, garlic, vinegar, olive oil, salt, and pepper(personally I like to use a mason jar like mom does and shake it all up). Pour over vegetable mixture in large bowl, stir to coat vegetables, and chill for 30 minutes to an hour. Taste salad before serving and add more salt and pepper, if desired.
