So here is a quick and easy meal that mom throws together after a long day working in the garden. You probably have all the ingredients in your pantry already, so give it a try. It’s her Beef and Bean Casserole. Great flavors with minimal work or ingredients. Let me know what you think about this version and y’all enjoy.
1 pound ground beef browned/drained of fat
1 16 ounce can pork and beans
1 medium onions diced
1 16 ounce can of corn with red peppers
2 cloves garlic minced
Salt and Pepper to taste
1 package of taco seasoning
2 cups crushed corn chips
2 cups cheddar cheese
Add the pork and beans, onion and corn to the browned ground beef.
Cook over medium heat for 3-5 minutes.
Add the garlic and cook an additional 2-3 minutes ,watch so you don’t burn the garlic.
Add in the taco seasoning mix and stir to combine well.
Let simmer 2-3 minutes.
Pour into a 9×9 prepared baking dish.
Cover with the corn chips and then the cheese.
Bake in a preheated 350°F oven for 30 minutes
