This is moms banana cream pie recipe which uses her basic pudding/custard recipe. You can change it up so many ways. My favorite is coconut cream pie using this recipe. But I’ll tell you what, this banana cream pie is amazing and I could eat it all myself.
Ingredients:
I pie crust (homemade is best) baked
2 egg yolks
2/3 cup flour
2 cups milk
1 cup sugar
3 tablespoons butter
1 teaspoon vanilla
3 bananas sliced
Meringue:
4 large egg whites
1/4 teaspoon cream of tartar
1/4 cup sugar
1 teaspoon vanilla
Combine the milk, egg yolks and flour sugar.
Mix very well then cook over medium to medium high heat.
Stir constantly while heating so it doesn’t scorch. Don’t stop stirring.
Once thickened, removed from the heat.
Add the butter and vanilla and stir in well.
Let sit for about 30 minutes to cool before proceeding.
Once cooled, cut up bananas and mix into filling.
Add filling to pie crust and top with the meringue.
Bake for 10 minutes in a 350°F oven
