This is a bit of a twist on a chicken casserole as this one has a crust. Not just any crust, a breadcrumb crust. In fact it is like making a crust for a cheese cake in that you mold it to the bottom and the sides of the casserole dish. You can also substitute out what vegetable you want to use in the dish as well. This casserole has amazing flavors and that unique texture coming from the crumb crust. Ingredients:
FOR THE CRUMB BASKET
5 cups bread crumbs
1/4 cup chopped onions
1/2 cup melted butter
1 teaspoon celery salt
1/2 teaspoon poultry seasoning
FOR THE FILLING
1/2 cup melted butter
1/3 cup flour
1/2 teaspoon salt
dash of pepper
1/2 cup milk
1 1/2 cup chicken broth or stock
3 cups cooked and chopped chicken
1 cup broccoli
Mix the crumb basket ingredients in a large bowl.
Press evenly and firmly on the bottom and up the sides of the prepared casserole dish.
Bake in a preheated 350°F oven for 15 minutes.
For the filling, melt butter in a pan and then add flour, salt and pepper mixing well.
Stir in milk and broth and heat thoroughly.
Now add the chicken and broccoli.
Pour carefully into the crumb basket and return to oven till heated through (15-20 minutes)
*Note, you can substitute peas or green beans for the broccoli.
