Sausage and Rice Casserole

This is another great casserole that I put together for my niece.  She is a vegetarian and I wanted to make her something special for Christmas dinner.  This is a great recipe with either a vegetarian sausage or with a real sausage as well. It is also great made with a spicy sausage.  Y’all are going to love this one.

 

  • 3 tablespoons oil
  • 1 pound sausage
  • 1 cup diced onion
  • 1 1/2 cup diced green peppers
  • 1 teaspoon garlic powder
  • salt and pepper to taste
  • 2 cups cooked rice
  • 1 cup chicken stock
  • 1 tablespoon oregano
  • 1 tablespoon chili powder
  • 1-2 cups shredded cheddar
  1. Saute sausage till browned.
  2. Add the onion, peppers and spices and mix well.  Cook for 4-5 minutes.
  3. In a large bowl combine the rice and remaining ingredients and mix well.
  4. Add in the sausage mixture to the rice and mix well
  5. Pour into a prepared baking dish and top with cheese.
  6. Bake in a preheated 350F oven for 10-15 minutes until bubbly around edges.
