This is another great casserole that I put together for my niece. She is a vegetarian and I wanted to make her something special for Christmas dinner. This is a great recipe with either a vegetarian sausage or with a real sausage as well. It is also great made with a spicy sausage. Y’all are going to love this one.
- 3 tablespoons oil
- 1 pound sausage
- 1 cup diced onion
- 1 1/2 cup diced green peppers
- 1 teaspoon garlic powder
- salt and pepper to taste
- 2 cups cooked rice
- 1 cup chicken stock
- 1 tablespoon oregano
- 1 tablespoon chili powder
- 1-2 cups shredded cheddar
- Saute sausage till browned.
- Add the onion, peppers and spices and mix well. Cook for 4-5 minutes.
- In a large bowl combine the rice and remaining ingredients and mix well.
- Add in the sausage mixture to the rice and mix well
- Pour into a prepared baking dish and top with cheese.
- Bake in a preheated 350F oven for 10-15 minutes until bubbly around edges.
