Mom is sharing another of her casserole recipes. This one will help you use up your end of the summer abundance of squash. It is a simple casserole to through together and the flavors meld so well together. Let me know what you think about this recipe in the comments, and y’all enjoy.
Ingredients:
1/2 cup cooked rice
1 can cream of chicken soup
1/2 cup of mayonnaise
1/3 cup milk
4 cups cubed chicken breast
2 cups squash diced
1 small onion finely chopped
1 small jar diced pimentos/drained
1 tablespoon dried thyme
1/4 tablespoon garlic powder
1/4 tablespoon pepper
1/3 cup shredded Parmesan cheese
1 teaspoon Weber salt free chicken seasoning
In a large bowl combine the soup, mayo and milk.
Now stir in the chicken, squash, onion, pimento and seasonings and mix well.
Add in the cooked rice and stir to combine
Pour mixture into a prepared 2 quart baking dish and then sprinkle cheese over top.
Bake uncovered at 350°F for 30-40 minutes, or until the edges are bubbly and the center is set.
