Sweet Potato Pie

I just love the holidays.  I could eat all the good pies, cakes, cookies and other desserts my mom, aunts, and grandmothers made all day long.  For some reason growing up, I never knew if I was eating pumpkin pie or sweet potato pie.  Mom used to make both, even sometimes combining the two.  I prefer mine right out of the oven with some ice cream or whipped cream.  We always leave most of the food out on the table and we snack all afternoon. Yes, I know it is not smart to do this with bacteria growing, but nobody in our family ever died from food poisoning.

This is so easy to make:

 

Ingredients

  • 1 1/2 c. sweet potatoes (cooked & mashed)
  • 2/3 c. packed dark brown sugar
  • 1/4 teaspoon ground allspice
  • 2 Large eggs beaten
  • 1 tbsp. lemon juice
  • 1 c. milk
  • 1 unbaked pie shell
  • Pecan halves for decoration on top only (optional)

Directions

  1. Mix all ingredients. Spread into pie shell. Bake in 450 degree oven for 15 min. Reduce heat to 325 degrees and bake for 30 min more.

    As you can see, I like a little whipped cream and some fall sprinkles on mine.  ENJOY
