There is nothing in my opinion more comforting and creamy than a Southern Corn Casserole. Now some of you may call it southern sweet corn spoon bread, scalloped corn, corn pudding or know it by other names, but no matter what you call it, this Southern Corn Casserole is the perfect side dish. 1/2 cup flour
1/2 cup corn meal
1/4 cup sugar (or less per taste)
3/4 teaspoon salt
1/2 teaspoon baking soda
10 tablespoons butter
2 eggs
1 cup sour cream
1 can creamed corn
1 can whole kernal corn
1 can green chilis
1 cup cheddar cheese
Preheat oven to 350 degrees. Spray 9X9 inch baking dish with nonstick cooking spray.
Mix together the dry ingredients.
In another mixing bowl, combine the can of whole kernel corn, creamed corn, sour cream, eggs and butter and stir together until well combined.
Add the dry ingredients to the corn mixture and mix well.
Add the chili’s and the cheese and stir to combine.
Pour into prepared baking dish. Bake in preheated oven for 45 minutes or until golden brown.
Let stand 5-10 minutes then serve warm.
