Sometimes you just need a warm hug from the past. Today was one of those days. Just getting over a respiratory infection and a chill in the air, I needed comfort. My kitchen always comforts me. It also is a place I retreat to when I am stressed. What better way to get the comfort I needed today than to get into my kitchen and make one of the recipes that always not only brings back memories, but bring me comfort.
So I pulled out grandma Jeans recipe box and found her peach crisp recipe. I can still feel and smell her kitchen wrapping around me when I bake one of her desserts. It’s funny how just the taste of food can send memories rushing back to you. This is one of the ones that does it for me.
I did decide to do what she used to tell me to do with her recipes, “add something different and make it what you like”. Now I didn’t really need to do the latter. I already loved her recipes, no changes needed. I did however do just that today. I decided to add another fruit. Mainly because I saw fresh blueberries at the market today and grabbed a few containers. I also decided to add a little something special. Bourbon. I had talked to mom earlier and she has a bad cold. I told her what I remembered her and my great grandmother (my Mamaw) Bessie always said we should take for a cold. A Hot Toddy. Always seems to help and since I still have a bit of a cough why not add it to my Crisp?
Well thanks for old family traditions my Crisp had an amazing new taste with the addition of the Bourbon. I think grandma Jean was exactly right in telling me to “add something different”. So between mom and two grandmas, I give you my latest recipe. Let me know what y’all think about it.
Ingredients:
- 4-5 large peaches (4 cups frozen if you don’t have fresh
- 1 cup blueberries (again frozen if need be)
- 1/4 cup bourbon
- 1/4 cup sugar
- 2 tablespoons cornstarch
- 1 teaspoon ground cinnamon
- 1 teaspoon fresh lemon juice
- 1/2 teaspoon vanilla extract
Topping
- 1 cup brown sugar
- 1 cup flour
- ¾ cup oat
- ½ cup butter, melted
Directions:
- Peal and cut peaches if using fresh, then put in large bowl with blueberries.
- Add the Bourbon, sugar, cornstarch,cinnamon, lemon juice and vanilla. Toss to completely coat the fruits.
- Pour in prepared 9 x 13 baking dish or large cast iron skillet.
- In small bowl combine the brown sugar, flour and oats along with the melted butter and toss with fork to combine.
- Sprinkle over the top of the fruit mixture.
- Bake for 35-45 at 350 degrees until bubbly and golden brown.
- Of course you serve while warm and top with a big ole scoop of vanilla ice cream.
